can someone please tell me what a de-shrouded MAF is.

you already got a 3 wire maf. deshrouding is basically removing the shroud in front of the maf. i also removed the middle post and just left the barrel around the sensor element

i removed the screen and the metal plate behind the sensor, but i left that middle post. i wonder if i should remove the metal below the barrel

that's what i did. but you may want to have a spare readily available just in case
