Default Check Engine Light after T-Stat Replacement

I have a 2011 3.0T A6 and I replaced the T-Stat over Christmas. All in all not a bad job (but the most evolved t-stat I have ever done). However... I either have an Electrical plug in the wrong spot or created a vacuum leak.

Car still runs fin, however I am getting a set of error codes to do with the Evap system and the flappers in the intake (1st Question, What purpose do those flappers serve?).

There was no carbon build up, so if I had put it back together correctly, I should not have an issue.

The only symptom (other than CEL) is that if you shut the car off, take off gas cap (refuel) when you restart it will stall after about 3 seconds and restarts a bit hard (5 or 6 seconds of cranking).

Error codes show up usually after 2nd start when you clear them -- sometime 15 - 30 miles down the road, today they did not come back, but I am sure It will on the way home.

I think maybe I swapped the electrical connectors on the 3 vacuum solenoids on the back of the engine or maybe got something stuck in the flappers mechanically (external where the vacuum motors connect)

I thought I marked everything well, but maybe I did not -- how do I verify wires and vacuum lines? Thanks for the help
