A common cause of no heating the cabin is the motors that activate the flaps on the heater box. There are various flaps that control direction of airflow and switching between cold and hot.
I suspect you could have a problem with the temp control flap motor. This can be confirmed by checking the fault memory of the ac control unit and running a measured block value check. Prob a job for someone who knows their way around a VCDS tester.

Also check for air in the system. Search the forum archives and you will see many discussions about how to burp the system. Personally I've never had a problem with that. Maybe you just need to drive the car with heat on for half hour and see if some air bubbles work out of the system.

Also read the referral archive I posted earlier. If there's a lot of stuff in the heater core you can get some of it out but you'll never get it all out and there's just minimal flow through it.

I have an occasionally not responding flap, probably a potentiometer or motor or something, but not enough for me to tear apart the dash to get to it and replace it!!!

I personally dread draining my coolant system. I always have a really hard time getting the system fully bleed. You never mentioned whether the heat worked prior to changing your timing belt/water pump etc.? All of my audis usually just take a good amount of driving/topping off/driving/topping off until the system is fully bleed and the heat gradually starts working again.

Update.
After flushing the Heating Core and with little heat only coming out of the center air vent. I was about to give up and take it a shop and have it done. Until I starting digging deep on how to bleed the system I finally was able to bleed the system and now I have heat.
