I wonder mechanically how this is accomplished. The different ECU (software) expands limiter at which point air flow along with fuel starts to decrease? If the torque stays the same then I am assuming that the boost and amount of fuel do not change it is just the point at which they are limited changes, meaning not at 4800 RPM but at 5150 RPM.
Now compare that to an aftermarket ECU upgrade (e.g. APR) 3.0 gains significant amount of torque, which I think changes both air and fuel intake along with many other variable (which I have no idea).
I am just a bit curious how this is mechanically accomplished.

You just have to remember that torque does not rely on movement but horsepower does. Like an electric motor, you can have torque at zero rpm. But horsepower involves torque and work done, I.E. movement, which in the case of an engine is RPMs. The greater the RPMs along with the torque at a given RPM is where the horsepower is derived.

Yup the relationship between HP, Torque and RPM is a very simple one. If you want to get more HP, without changing Peak torque, then you must maintain Torque to a Higher RPM.
HP = Torque (ft-lbs) x RPM/5252
For the 3.0TFSI engine with 310 HP, torque starts to drop off at about 4,800 RPM, so the newer 333HP engine must maintain torque to about 5150 RPM, By Boost, Mechanical changes, Timing, whatever.
