Thanks! So I changed the sensor today. It was easy and had no problems. I lost about 1.5 Qts of coolant. Then erased the code, check engine went off, coolant temp gauge came back to normal and finally stayed there!:-)
Emjayem thanks for great help and patience!

Where can I get this sensor and whats the part number? I have the same problem with p3081, just did TB and thermostat and that didn't help.

Rather basic question, but is it possible to suck up a sufficient amount of coolant from the reservoir so that the level would be lower than the sensor in order to replace it without having coolant gushing out ?

I have the same sensor issue right now and would like to change it out, just worried about the mess from the coolant...Any other tips would be appreciated, tks...
