The Steering wheel shown in the Autotrader ad for the 2008 S8, what model is that from? I wonder how difficult it would be to install.
Any thoughts on switching my 2008 S8 steering wheel to something like this?

Looks like an R8 steering wheel.

I've had the facelift steering wheel for a while - great update imo. The scrollers are easier to use and it's about 1cm smaller in diameter

The 2008 car is a r8 steering wheel with aftermarket paddles attached, it's a direct swap if you get one with paddles.

The newer s8 wheel can also be fitted as the splines are the same, however you need to do some mods to switches and wiring to make work but it's totally doable.

The following website has done a few custom wheels for d3's now so would be worth talking too.
