Yes, fine or better. Run 275/40-20 on my 2015 S8 on factory wheels. Way more tire choices as you say, and cheaper. Fills out wheel wells just a bit and made speedo read dead on post- change on mine. Using Conti DWs summer and will shift to DWS-06 in late fall when Sierra weather gets dicey but not really true winter hard ice and such.

It varies by size and motor, and in some cases even speed rating of tire. I typically go for half way from the mid load pressure to the full load pressure. See charts from 2015 owners manual below. So with an S8 in 20s, that means 38 front (rounded up) and 35 rear. I haven't had D4 S8 (or tires) long enough, but over time and especially at winter vs. summer swap outs, I look across tread faces for evenness of wear and go up or down a bit as needed.
On my D3 W12 over 100K miles and 4 or so sets of (mostly summer) tires at similar total weight and tire size, I tended to almost always come out between 38 and 39 psi front. A pound or two less in back. Always measured cold.
