So going from a 911 to a S8...
Turning my daily driver 996 into an occasional car - picked up a 2013 S8.
Initial impression is that the S8 is a large fast car but I really wish there was more of an exhaust growl - even if there was an after market option
Also getting used to the handling coming from a 911.
Would you guys sell the 911 or keep it (I've had it for over 10 yrs)

I came from a 997.1S. In all honesty I don't miss it.
I'd sell your 996. It is nice but dated. It is not a TT so its not exactly a performance car and electronics are archaic. No offense, I'm just being real.

I know - the 996 is dated but there's something very raw and visceral about my trusty old 996. She's still tight as the day I bought her, still shines and manages to impress me - and really fun to drive on the back roads... But I need garage space for three cars otherwise the s8 sits outdoors for now

All the way back to OP, an exhaust mod you could do is just bolt in the S8 sport exhaust. It showed up off and on as a US option in theory (in the order guide) even if not shipped, but is now clearly an S8 Plus option and is in the parts catalog if you look carefully with a parts guy who knows what he/she is doing. As exhausts go, not that pricy for well done performance ones. S8 specific too, so still four pipes out, valved and even black version if you want to go that way. BUT, I still have not seen a single Plus on the street, let alone heard one with sport exhaust option, so I would want to hear it first. I don't recall the one or two new Plus owners who checked in here briefly ever really mentioned it, nor much about CCB option for that matter.
Other mod is pretty obvious, but you need to pay to play and probably want to be clocked out of your warranty risk wise: APR chip. Puts it into and pretty obviously past (stock) Plus league. Apparently Unitronic does not have their S8 one out yet and not sure who else may offer one for S8 (or RS7) specifically.

I'd keep the 911, if it's not too much of an inconvenience. I've seen a few articles that seem to think that generation is as depreciated as it will ever be, and even though the S8 is faster, I'd rather have the 911 on a twisty road by quite a margin. My first instinct, anyhow.

Obviously, these are cousins to the pair you're evaluating, but...
I've been surprised with the handling of my A8. For any normal driving, it's way more than enough; and I'm guessing there are few cars as comfortable.
That being said, I don't think I'd ever get rid of my '06 Cayman S. It's built for a completely different reason, and never fails to deliver. Handling and road feel in the twisties are completely different. There's no escaping the fact that a large sedan can't have the dynamics of a mid (or, in your case, rear) engine sports car. Then, there's that flat 6 wail!
The Porsche doesn't completely wake up until 5K, so you have to drive it with purpose to get that 295HP. The electronics are dated enough to remind me of Blade Runner... But, I couldn't agree with you more about the visceral feeling. I felt the same for a C4 Corvette I once had; but that required a level of faith to push in a corner that the Cayman has never asked me for.
If you can sort out your garaging, I vote for keeping it! If you don't use it much, I wonder what the hazards are for keeping the 911 outside and properly covered.
