Default Rear seat folds completely flat?

I saw a Youtube video showing a 2015 A3 trunk where the rear seat folded completely flat, level with the trunk. Then I went to the dealer and the seat was about 3" higher than the trunk when folded. Puzzling to me. Is there maybe a difference between having Quattro or FWD, or 1.8 or 2.0, or TDI or gas variations?

Rear drive is the issue. Less trunk space.

There is no difference in trunk space between the quattro and the fwd model.

The headrests could have been hitting the seat backs or something else but they do fold " mostly " flat

That is not accurate. The A3 is available two ways; 1) FWD with the 1.8L engine and Quattro with the 2.0L engine.

I don't believe this to be true.

If you buy a rear trunk mat for an A3/S3, they are different if the car is Quattro or not. There is less volume in the Quattro trunk than non Quattro trunk. How much is probably negligible. My sales person has commented on this too.

Audi's site lists the FWD model as having 12.3 ft^3 of trunk space, while the quattro model has 10.0. The difference is evident if you've ever looked at both side by side.

My sales person said she actually had a guy buy the 1.8 so his golf clubs would fit...

The trunk on the Quattro is definitely different than the FWD. The FWD has a spare tire in the trunk. The Quattro does not have a spare tire due to the rear drivetrain. Also, on my quattro, there is a ~3" raised area right behind the rear seats which makes the seats sit ~3" higher than the trunk deck when the seats are down.
