Default 2001 Allroad in♤ Las Vegas ♧115° SUMMER OVERHEATING

Hello AudiWorld!
I know there may be a few of these posts already out there, but seeing how I live in one hot a$$, dry climate, it's a good topic to start.
So...... ever since the summer hit, my car has gotten hotter and hotter.
The temps can get up to 115° F out here. When my A/C is on full blast, compressor kicks off at a stop light, if I drive her a lil hard and the coolant can get higher than half way, sometimes climbing up to 1.5 bars past half, depending on how aggressively I'm driving, and gets worse when stopped at a light, just hanging out there at 1 bar past half. The oil gauge, on the other hand, seems to hang out at 225, and sometimes goes up to to 250 when driven hard with A/C on. I am wondering if this is normal, or should I try to bear the heat without A/C? It seems like it gets heat soaked quickly and takes a couple of miles of granny driving and shifting to get her down to the coolant temp half way mark. Any suggestions? Should I run pure distilled water? Or a 20/80 coolant to water ratio? Only other thing I can think of is that this car came from up North in Reno, cold climate, and maybe they used a more concentrated antifreeze mix or just pure coolant? Should I add another fan to make it a 4-fan super cooling allroad? Or maybe run 2 radiators? Just kidding... Any suggestions?

Oh and a couple other things, my clutch fan wobbles a lil bit when I spin it with my hand, has a lil play, and I have verified that all 3 fans are spinning with A/C on...
Oh yeah my coolant smells like used gear oil's younger brother.

Something to add: it was 112° F out today, when I was on my way home I cruised it at 75, drove all the way home (20 miles) without punching it, and turned off the A/C half way home... no problems, oil temp at 225, and coolant temp at 12 o' clock. When I got home I let it idle for about 3 or so minutes, and when I went to turn it off, the oil temp was just a little below 225, and my coolant was at 1 bar past half... just from idiling. And I checked the fans, all 3 were on and working, but don't know if they were in HIGH mode. They didn't seem like it.

oil temp seems fine
i would recommend looking into a lower temp thermostat for starters
also doing a coolant flush wouldn't hurt either and use g13/water 50/50.

or you could move from Hades to someplace cooler
