I am a bit confused about what you are planning on - the spare wheel with new rubber?
Why? I guess I don't understand. I can see why you want to run smaller wheels with different rubber but you will replace the rubber on the spare correct?
The rubber on the spare are extremely expensive to replace more then normal tires.

I personally have been toying with this idea because my wheels are pretty chewed up and my tires are pretty worn, and where I live (boston metro) I'm often confronted with car consuming sinkholes after the winter months (at least until they fill in with A4 oil pans and mini coopers), and often I need to go over curbs due to absurdly narrow streets or tight parking constraints; the curbs around here are made of sharpened granite and will pinch a hole in the sidewall of a 225/55-17 unless you're going 0.001mph and hit them dead on.
