3K miles? Either they haven't heard any news since 1970, or they're trying to sell you oil. Especially with synthetics, which have been around 30 years now. Look at the back of a Mobil1 bottle, which is Audi approved. You can go 12 months or 25,000 miles and still meet the original standards, and Mobil will buy you a new engine if you break yours by following their suggestions.
Although everyone including Mobil would say 10,000 miles is enough, and not to worry if you're a couple of hours late for that appointment.(G)
Even in 1970 the recommendations were something like 7500 miles, oil filter every SECOND oil change, and 3000 miles only for "Severe use" meaning taxis, police cars, delivery fleets in high density urban traffic.
Those days are long gone. Changing oil at 3000 miles, is now considered a gross polluter. There's just no rational need for it.

M1 EP states "up to 15,000 miles" and as far as I know, that's the longest interval of any of their current product portfolio.
They did mention 25K some time in the past, but backed away from it.

You mean, I can sell the old bottles on eBay as "Vintage Super Oil!" ?(G)
With the incredibly high mileage I do every year, I have folks who'll take my used oil and run it another six months.(G)

Oil consumption issues + sludge buildup in all German cars are well known and nothing can be done about it. It comes exclusively with alusil block manufacturing technology utilized also in all audis. Audi already had 2 class action lawsuits and lost ... next are coming. Prepare to add quart of oil every 1000-1500 miles

Did you check the oil level display after your last oil change? It's also quite possible that your oil was not topped off or low on the display to start.

I bought the car, according to carfax, in the time period the dealer has the Q5 they serviced it. I than drove the car for 3k miles, and my oil light comes on saying "minimum oil level, pull over and fill" So I went and bought some a quart and put the entire quart in, and now it is a couple lines below "max" indicator. I guess you are right, the 3.2l does eat oil, or it was not topped off^.

You car may have a faulty sensor, an engine oil leak, or it can be burning oil, or it may have not been serviced properly before the sale.
You can buy a dipstick – there is a dipstick tube, covered by a plug, so you can use a dipstick to check if your sensor is accurate.
Have the car checked for leaks- often a seller would wash the engine and remove any traces of leaks that would re-appear later again after driving for a few thousand miles.
Hope it helps.
