When it comes to Nokian, my research shows I should get the R2, and those are what Hartmann gets the most of when they're mounting the tires on the RS7 rims. The Nokian guy is suggesting WGR3's, which I guess are all weather... I have my summer rims and rubber, just want winter rims and rubber.

Any reputable wheel/tire shop can order and install the TPMS sensors - that's what I did. Don't bother ordering from a dealership because they will overcharge you like crazy.
As far as the skinniest tire, I recall seeing someone running 255s on an RS7. I believe it was a 255/35/20 Nokian Hakka R2. The overall diameter will be about 1.7% less which is generally regarded as an acceptable variation. Other tires in that size are the Dunlop Wintersport 3D and the Pirelli Sottozero 3 (in addition to the Blizzaks).
If you want a bit more sidewall, you could probably run a 255/40/20 as long as the offset isn't too aggressive on the wheels but the only tires in that size are the Blizzaks and Pirelli Sottozero II.
If your tire guy is really that good, this is something he should already know and address for you.

Hartmann can't tell you the tire sizes that can fit their rims. Each tire manufacturer has their own specs on the acceptable rim widths for each tire they make.
Here is a link I found a while ago that has the specs for Nokian tires. They say the R2 in a 255/35/20 can fit on an 8.5 to 10" rim so the Hartmann wheels should work fine.

What is the Audi winter tire package? I just picked up my RS7 dynamic package in Germany wth the summer tires.

I had the same dilemma. I ordered tires/wheels from Tire Rack. They specifically pointed me to 3 sets of wheels that would clear the RS7 brakes. They shipped them in and I took them to the dealer- the wheels would not clear the front brakes. Long story short- it took several months, lawyers and the intervention of my credit card company to get a refund. So, the story on Tire Rack is they are great if everything gets shipped correctly and absolutely a nightmare if something is not right. Check out the online reviews- I wish that I would have. After all that I gave Audi the $$ for their RS7 winter tire package. At least I know it is going to fit.
