Default testing cooling fans' high speed

Is there a way to test the operation of the high speed of the cooling fans? I ran the test sequence for output tests for HVAC. In the test for the fans the 2 electric fans came on the low speed only. Is there a way to test the high speed function?

2001 Audi A6 2.7 tip.

Car runs fine with the temp gauge almost always right in the center, except during 80 + degree days when the AC is on and I am climbing a long hill. Then the temp begins to creep up above the center point, until I crest the hill or turn off the AC. I suspect the fans are not going to high speed.
