1.8T or 2.8?
I'm very interested in joining in on all of the fun you guys are having with your A4s. Just one question...how does the 1.8T compare to the 2.8. Does the 2.8 offer substanmtially better perfromnce overall versus the smaller engine. Does anyone adamantly recommend one versus the other? Any thoughts?

Depends on what you are looking for, both are fine cars (more)
You really have to look at you own requirements. What is your price break point? Are there some features that you absolutely must have?
Here are some main differences:
1.8T
4 cylinder turbo 150hp stock (with chip @195hp, with chip and exhaust @205 hp). Very upgradable (if you can accept chipping, warranty work, etc.). Higher revving engine (but still very quiet IMO). No leather interior. A fun ride.
2.8
6 cylinder engine, 190 hp. Not as upgradable (may only get @+10 hp for a low cost, otherwise you are looking at higher $$ for upgraded performance). Wood interior and leather option. Power seats. A more upscale ride.
Think about what you want in a new car, what you are comfortable spending, also look at what you drive now (likes/dislikes). Then test drive both with the options you prefer.
In either case quattro and sport package should be a must.
Good Luck!
