Will the snub mount relieve some of the pressure on the left/right mounts?

Default Not much. The snub deals more with fore/aft movement than with left/right rocking.
The engine if free to pivot about the snub to the limit the trans and engine mounts permit.

Do you know if the mounts for the 2.8 are direct replacent, or do they need modification?

Default Direct. It isn't all that hard but the passenger's side is a little ishy due to all the 'stuff' on
that side . .shields etc.
