The manual says use 33 for up to 3 people (my case) or 35 for full load. Will 33 be too soft or hurt gas mileage for a road trip that consists of mostly highway driving?

You'll be fine at 33.
Just by checking your tire inflation and actually inflating them to the recomended pressures for every tire, you'll be better off than 95% of the population.

Try this
38 in the front and 34 in the rear. Sounds a little weird, but it makes a noticeable effect on reducing understeer. It's a trick I learned with my old GTI.
Some folks will say this trick will not have the same affect on an AWD car as on a FWD car. I say just try it and then go take a drive on your favorite curvy road. If you don't notice a difference you can always change the pressure so they're both the same. But, I bet you leave it with different pressures.
