Haven't noticed that they do...
but I turn them down when I get too warm. It does take a while as it has been in the teens here for the past two weeks (it's 12.7°F now). Just do the same and you'll be fine. That way you can warm up cold buns fast and then turn it down to a nice maintenance temperature.

No, they don't have an auto shutoff
I run mine at 5 to warm up but have to turn it down to 3 once they do or they actually get really uncomfortably hot. 3 seems just right for me on all but the subzero days.

Not always the case
A buddy is going through the rounds with Audi right now over the heated rear seats in his Allroad. The seats heated up too much and actually burned the seats and a coat that was on the seat.
I always check mine to make sure they are off if there are no passengers in those seats.
