I start the car and let it sit until the idle drops from the high idle (1200 or so rpm) to the normal idle (750-800 rpm, little more if the AC is on). I don't let it sit idle once it's stable at normal idle. Once you're moving, it's not about slow, but about easy on the engine load. Just don't put the pedal down or rev up the engine for the first few miles. Certainly not before coolant temp is normal. For oil temp, you'd need a data logger and just see how long it takes in your car before oil gets up to a stable temp.
