Looks like my audi connect is about to expire. I never really used it so what am I missing or not missing not using it??

Well, you can't miss something you've never used, so what's the point? Anyway, as snagit said, there are a million threads on this subject and audiusa.com has plenty of information, too including tutorial videos. Keep in mind not all services are available for all models.

You can live without any of the features. You can also live without a luxury car. None of this is a necessity. It's all about wants.
I've written in favor of Audi connect on many threads. I personally like it because it does exactly what I expected it to do, which is primarily the integration with the cloud which allows me to share calendar appointments and destinations from my phone or computer with the car in advance and then simply call it up for navigation, or do a Google Local Voice search while I'm on the go without taking my eyes off the road and hands off the steering wheel. It's all about convenience.
It also adds some eye candy with the realistic Google Earth satellite overlays instead of the boring false color standard maps.

It sounds like your a minimal user. FreedomPop provides a SIM $0/month for 200MB of data. Lets me do all I need. Google searches, transfer destinations from my computer, weather and gas prices. One user said he bought two SIMs (approx $5) for extra data.

Unless they changed it or it is different from 2016 models, you still have to go through Audi connect. It will appear on the AT&T bill. The original SIM card works. I tried to use a AT&T SIM card and it would not recognize it.
