For the record, my C5 displays temp all the time, the line below temp is the one that toggles between distance to empty, instant or average fuel consumption, average speed, etc.
There should be 4 lines of data. The top is for the radio info, 2nd line is temp, 3rd line is the stuff I think you are seeking, 4th line for what gear you are in for (Tiptronic cars only).
So if your 3rd line is completely blank, it is quite possible the pixels in the instrument cluster are fried (which has been known to happen in these cars, but usually just random pixels here or there), and will not give you an error in VAG COM scan.
When you first start the car, does anything else display on that line? I think for Tiptronic cars it should read something like "when stationary apply foot brake while selecting gear" or something like that. I think "while selecting gear" is on the line that displays the stuff that toggles with the wiper stalk. If manual transmission, it should say "press clutch pedal to start engine" with "to start engine" in that line. Does any of that display?

Does your Autocheck display anything? Try using the test procedure on the third page of this pdf (which is the allroad owners manual) and verify that the lcd display is not broken.

Regarding the display, I don't have the 4 line one, I have the 2 line one, that may very well be the issue at hand...

I could swear I have seen cars with my instrument cluster and a DIS wiper stalk, maybe I was mistaken..?

It may well be that cars that had the optional DIS were fitted with a different instrument cluster but I think that seems very unlikely, and not a cost efficient way to manufacture cars.
I'll keep on digging, maybe I'm looking at a cluster swap to get this done, if only I didn't have an immobilizer...

Wait...where are you located? Are you outside the US? I've never seen a US spec C5 have that 2-window center display. That looks more like the A4 cluster

Yes, this C5 is European, pretty sure it's not an import either so should be manufactured for Sweden.
From what I can tell this cluster is pretty rare, not sure if it was fitted in the factory or if it could even have been changed by a previous owner?

I promised I'd be back so here I am.

Now that the conversion is done I can tell you it is not possible to enable the on board computer if you have one of those "low-line" displays I had.
I had to adapt a whole new cluster in order to make this work, a lot of work but definitely doable.

Since I have also retro fitted a Rns-E i needed to swap to a Can-bus cluster anyway so it's all fine
