... I thought it was valve cover gaskets but they don't seem to think so. Consumption has gone up from 1qt per 3K miles to 1qt per 600 miles.
They filled it to the max and told me to go back when I've put 1000 miles on the car... Any ideas on what may be going on?
Thanks!

bad valve seals?
My car started consuming oil at a rate like that around 80k miles. It continued on for about 10k miles. Around 90k, it went back to 1 quart/2500 miles and has been the same ever since. I'm now at 113k.

Gotta find it first.
If you suddenly went from normal oil consuption to crazy oil consumption, there has been some sudden failure; things like value seals wear over time. If sudden, something changed suddenly. The A6 uses a fairly complex crank vent system. A plugged crank vent can cause oil comsuption. I would pull it all apart and check for blockages. Sorry to be vague, but there is no easy answer. Be persistent, don't guess at something and waste money repairing something that isn't broken, and be sure to post your findings here.
