Can I run 255/35/20 on the OEM 20" S8 wheel? 265/35/20 on the car. Nobody makes all season 265's

Agreed run 275's
As long as a 9" or 9 1/2" rim. I think it's better with the slightly bigger diameter (27.7 vs. 27.0) as far as filling out the wheel wells, plus it gives that slight extra height to protect sidewall just a bit more. Even with air shocks, it needs any protection it can get down at the rim. If you ever see the tire loose off the rim, there isn't much there there.
The A8 speedo also reads meaningfully wrong with the 27" sizes (several percent high), and I prefer accuracy, not something fibbing to me to avoid a ticket at the margin. Reads much closer to right with the 27.7's.
Having driven the car at 450 HP with W12 weight op front with 275 summers vs. 255 mid line all seasons's, it isn't even close. A lot is the summer grip of course, but it's also the total tread size and width in part. Take sweeping corners routinely with the 275's going in hot and coming smoothly down on speed, where with the 255's I would find the brakes at the verge of lock ups. Ditto with fast stops in general. You end up driving at 6/10 or 7/10's instead of 8/10s when you want to push it a bit. I don't want just a stoplight to stoplight car, and 255's would be a step in that direction.
No brainer for me if I go AS's to use 275's. Only time I would look at 255's (or 245's) would be snows. Personally I would probably still do the AS PZero Nero Pirelli's which I have run on the A6, since the Michelins don't have the XL rating.
