I played with VCDS and saw no sign of adjusting that limit.

Spent a few hours with VCDS last night(first time I've had a chance since picking her up). I did find where you can adjust the massage time limit. Unfortunately the upper limit is 600 seconds which is what it's set at. So the definitive answer is that you can adjust the time. But only down and not up.

I did not see anything for the seat heaters. That doesn't mean it's not there, only that I didn't see it.

As a side note don't use the scroll wheel while in long coding helper. It will switch to the next bit and if there is a drop down there it will change it. I enabled the lap timer for the boost and oil temp functions and managed to change consumption to L/100km. Had to go back in and find/fix it.
