You probably need a new thermostat. See this thread:

If it not the Thermostat, and it might be the ECT sensor maybe?

I'd bet on the thermostat. The A3 monitors the coolant temp and if it doesn't follow the profile it's looking for it kills the gauge.

It’s funny how, a few days ago, I’m driving and the temp. gauge just rises up and my temp gauge is normal now. Could it be that it got stuck, and it fixed itself and went back to normal? How weird is that?? LOL

did you read that thread linked above? all is explained.

you need a new thermostat. If you have an 06, its time, anyway.
It will happen again. Then you will get a check engine light. you'll see.

Sympotoms can be masked by warm spells and climate change.

Wow. I just got the same problem a few days ago, 2006 A3.

Temp gauge stuck on cold, check engine light eventually came on.

Interior heat still works OK.

By any chance, is this covered by any of the Audi warranty extensions?

Nope--you're on your own.

FWIW--A3 2.0T FSI warranty extensions cover PCV, intake flapper (listed as intake manifold runner sensor), and intake cam follower (covers high-pressure fuel pump and intake cam damage). There's also a program to replace coil packs.
