Default 3,500Km ED Road/Train Trip Planning

After many years of wanting to, I will finally be doing ED on a new Q7 early next year! I'm looking for general thoughts on my itenerary to make sure I'm not going to miss anything.

I already have places to stay identified but recommendations would be great, since I haven't booked anything yet. There are a few days/items I am not flexible on, and they are in Bold. Everything else is open to suggestions/changes. A big change may be to skip the Ring, since I won't be taking the Q7 out and dropping that would save a full day of backtracking, which would allow for slowing things down.

Even if you don't have any major suggestions, I would really appreciate any cool sites to see, places to go, or specific foods to get in any of the places I have in my itinerary below. Also, if anyone has any fool-proof thoughts on European-wide SIM cards, it would be greatly appreciated. Thanks in advance for the help!

Can I come?

Seriously, isn't the GP of Monaco Memorial Day Weekend? Says you are going early next year. Is that 16' to 17'?

Well, apparently I enjoyed NYE a bit too much last night and forgot that it is already 2016! I'll edit my first post to clarify, but yes, this will be a May 2016 ED.

Gotcha. I'm planning on doing a ED on the SQ7's when they come out.

If your mobile phone service is with T-Mobile, your phone will work in Europe.

Voice is 10 cents per minute, free text, and free data at 3G speed (good enough for email).

My At&T guy said all I have to do is pick up a "pay as you go" sim card in Germany and I'll be golden throughout Europe. Guess I have something else to research.

AT&T charge me $0.99/min during my last ED (no data - just a phone)
