Not installing an oil temperature thermostat ...
.
would make me a little nervous, especially in the Winter.
With a max oil temp of only 195 oF even on the track, I'd be worried about moisture accumulating in the oil and never getting boiled out.

I've got a 180 degree thermo and my oil temps stay pegged at 180 in street driving
even when it's 75+ degrees out. I'd imagine it would be substantially less than that without the thermo, and even lower in lower temps.
I'm with RYOUNG on this one - not a good idea to run it without the thermo. Methinks you'll be well out of the normal oil operating temps that it is designed for.
