can you swap a 2.8 for a 1.8t ?

Simplest answer is yes, and I don't intend to participate is junkyard wars :)
Bolting on things is the easy part as long as you have access to a welder and some sheet metal. Well, in this case, much more things will bolt on freely such as the engine mounts.
However, 1.8T engines came out with OBDII, so you will need most of that wiring and electronics, unless you can just custom install your multicoil packs from MSD and programmable fuel injection computer (from a few companies I can't remember off hand, one starts with an A..), then you will be in business shortly. The later may be the cheaper route anyway, plus that how most import quarter pounders deal with their 400hp + micro machines
