does that gauge in the odometer measure water temp or coolant temp?

Your cooling system uses an approximate 50/50 mixture of distilled water and G12 coolant . . .
The cooling system temperature sensor measures the temperature of this mixture and sends a signal to your dashboard coolant temperature display. That is all.
However, you also have a thermostat in your cooling system that controls the flow of coolant into the engine, as the heat of the engine increases and decreases so does the coolant. As the coolant flows by the metal strips on the thermostat those strips of metal expand and contract due to heat transfer and accordingly increase and decrease the coolant flow.
When the thermostat increases the flow to 100% and your engine continues to make more heat, your coolant temperature sensor will indicate that your coolant temps have passed the mid-point and go toward the hot side. At this point, you need to decrease your engine speed, because your cooling system lacks the ability to handle the heat created by the engine.

The coolant sensor measures the temp, and sends a signal to the ECU and Intsrument cluster....
The ECU uses it for cold start enrichment, retarding timing if it gets too hot, etc, etc.
