Is this a good idea? Can it even be done?
If I choose to upgrade my front brakes (Brembo etc.) on my allroad, can/should I put the stock front brakes on the back wheels thus increasing the brake area on the back also?
Has this been done, do people do this usually?

All the brackets are different.,
Besides, the majority feel you don't need more brake in the back.
If you have more in the front then there is more weight xfer, so there is less traction in the back and they will lockup faster than stock all other things being equal.

Using the front caliper in the back will present a problem with fluid demand. Combined with the larger front calipers you will use this would require a larger or even a dual master cylinder set up. However if you just use the front rotor on th rear with a caliper using a smaller piston diameter it can and will work. The tricky part is finding a caliper, a small 2 piston(aposed type) like for exsample an Alcon R type works really well. Piston diameter is important thought.
