Default i think what your talking about is....

grinding the valve seats. they are ground at several decreasing angles to the valve stem. this helps smooth flow. it also reduces heat transfer to the head, due to reduced contact area. this reduction in contact area also helps with valve sealing.

Default From what I have heard, one should not polish the air passages in the head . . .

the air passages in the head become more efficient when ported, but polishing the air passages decreases atomization of the fuel and air. After the fuel injectors, all pathways to the combusion chambers should have a "rough" polish, rather than a smooth one. So make as many air passages before the fuel injectors as smooth as possible to increase air flow, but give the passages from the fuel injectors to the combusion chamber a rougher finish to promote maximum fuel atomization and combustibility. The Direct Injection engines have a distinct advantage in this regard, because they can mirror polish every surface without worrying about poor fuel atomization in the combustion chamber.
