Are you talking about a coolant temp switch?
I think the A4 and S4 use the same switch, which I think is low speed at 87C and high at 99C.
You could just make it highspeed at 87C and leave it at that.
There was rumor that Neuspeed made a switch that turned on at lower temps, but I don't know if anyone has actually gotten one.
As for an A/F gauge, they're good for a light show I guess, but not much more.

What I want is a rheostat in the car with off, on, and variable, not killed by the ignition so I can run it while the car is off. The idea of having on a turbo timer would be cool too.

I don't know of a combo as you describe it but you can get
(information .. not an endorsement) an adjustable thermostat (range something like 45 degrees F to 220 F) from JC Whitney. You'd have to wire the thermostat's lead to your relay in common with an on off switch in the cabin tho.

I use a Edelbrock A/F ratio gauge.
It comes with a 02 sensor and on my car it was showing a steady 12:1-12.5:1 at wot and my 02 readings with the vag were dead on. When I pushed the injectors to their limit by running more boost the A/F gauge started to drop down to 13:1 and my 02 readings ran lean.
