Which syn oil provides more protection 0W40, 5W30, 10W30, etc...

It mostly depends on temperature.
You asked about protection. Well, if it's very cold outside and you use a thick oil (i.e. 15-50), there will not be good protection at startup because the oil won't flow through the engine well. However, if you're driving on a track in the summer, 15-50 may be what you want. If you use 0-30 or something like that when it's hot out and you're pushing the car hard, that oil won't stand up to such high heat and not "protect" well. Check your owner's manual. FWIW, I always use Mobil 1. 15-50 in the summer, 5-30 in the winter. Sometimes 10-30 in spring/fall.

Where do you live?
Pat's comments are correct. I live up North, track my car, and use 0w-40 to handle the extremes year-round. If I lived down South and didn't track the car, I'd be using 10w-30.

Remember when going to thicker oils for summer protection, you increase the oil pressure.
Audi engines appear sensitive to oil viscosity. So, while you may run a higher viscosity oil for summer to protect moving parts, it may cause you engine to eat more oil due to increased oil pressures.
