Upgrading Cams 2k A4 2.8 30v V6
First had anyone done this, either purchased new cams or had theirs custom ground.
I am planning on using a local company to put a mild street grind on my current cams, just want to make sure I do this right before I get stuck.
Also once the new cams are in place will I have to make any adjustments to other parts of the car besides valve train... (ECU, timing, etc.)

Do they have a flow bench, and a way to simulate the operating parameters of the engine on a computer? Only way to really be able to develop a cam profile from scratch, is to spend the time and run sim's and tests. Thats the expensive part...
Make sure the shop you use is at least familiar with VW cams, if they aren't I wouldn't use them. VAG cams can be finicky from what I was told by a shop.

IMO, better to get cams already "developed", tried & tested. As you only have to install them once. ;O)

Need a little more info...
The shop I was considering using is call "Oregon Cam Grinding." I will make sure and ask about how they will test and design the cams.
They do have experience with VAG Cams, at least they said they custom grind several 1.8T Cams.
And just for my clarification would I need to upgrade the ECU to adjust for new cams or would it automatically adjust?

Typically don't need to reprogram the ECU for them to work, however if you were to run a more tailored program, you'd pick up more power than with the stock program. Maybe run an Abt(?) 30v ecu program? I know some company has one...
