what do you need in order to make ur 1.8T into a 2.0T?

Rods aren't needed....
just a 2.0 crank, new pistons/rings, and the block bored out.
I've got about $3000 into just the 2.0 build-up. With the exception of the machine work, I did everything myself. That's a full balance job, main and head studs, reconditioned rods, JE Forged pistons, magnafluxed crank, etc.
The chip is the hard thing, if you have the APR or PES kit, you'll probably be OK running chip that comes with the kit. If you're going custom turbo, then a stand-alone may be the best option. I'm willing to guess in the future a chip for a custom turbo'd 2.0 will be more readily available, but it might be a couple years yet.

Who did your machining, John?
Mind telling me btw what is meant by a stroker kit...i thought one could increase displacement either by boring cylinder, or stroking?

Just a local shop that dealt mostly with V8 stuff...
They probably have never seen a VW block before
They took FOREVER, I'd never go back to them. Since I'm in the Detroit area, there are probably several other places I could go if need be.
Going to a 2.0 is mostly a stroker kit, the stock 2.0 only has a 1.5mm increase in bore, so it's not really all that much (about 70cc)
There is a 6.4mm increase in stroke, which is where most of the increase comes from (~130cc)
The 1.8T is considered an undersquare motor, meaning the stroke > bore. Undersquare motors are good at making low-end torque, but aren't known for being high RPM screamers. Because of this, I would not do just the crank alone, as the bore/stroke ratio would get even worse.
