So my dealership took the liberty to add the USB cables and pin connector for the tow package onto my factory order... What exactly am I getting for the $120 price tag on the cables?

I believe you're getting a $5 USB cable and $15 pin connector.

Tell me more about this. I ordered both but still have time to change. Salesman told me I need this usb cable from Audi to get full functionality with my iPhone hooked up to apple car play

He's pulling your whatever. You can get full functionality with any Apple certified Lightning cable (for a lot less money).
Amazon has some nice short ones that eliminate a bunch of excess cable cluttering up your center console. I'm using one of these with an iPod Touch that I leave in the console. https://www.amazon.com/gp/product/B0...?ie=UTF8&psc=1 I tried Apple Car Play & it sucked so bad, I gave up on it. Many people are finding the same experience.

What about the pin connector for tow package? Is there a work around with this? Does this come with the hitch receiver insert kit I ordered?

The connector that Audi charges $70 for is built by Pollak. I ordered mine here https://www.amazon.com/gp/product/B0...?ie=UTF8&psc=1 It just plugs into the pigtail that is present as part of the tow package option.
Not familiar with the "hitch receiver insert kit". I just went to Walmart & purchased a Reese 2" draw bar & the correct size ball.

The salesman just gave me a coiled audi cable free of charge. Just smile and be nice you never know.

My general approach whenever I buy/lease a new car is, after everything is said and done and we're about to go into the finance guy's office, I say "oh, hey, I forgot about the cable/snap-in adapter/etc. Can you throw that in for me?"
