I keep mine with the navi showing and the speedo/tach smaller, and use the pop up screen for music info.
Is there a way the vehicle can remember these settings? Each time we restart it goes back to standard display mode.

Nope. And as far as I know, nobody has discovered coding to fix it either. There is coding to delete some of the VC tabs if you want (audio, nav), but I don't think you can delete the trip computer tab.

Usually I keep the speedo and tach on the smaller setting and toggle through what I need as I go.. I keep the map view on the "pop-up" screen 95% of the time..

I switch based on need, but usually its small tach, and then other vehicle info in the center. I love to drive and enjoy every bend in the road and listening to the sound of the engine, so am not much of a tinkerer while driving.

I keep the speed/tach small 99% of the time and keep it on the trip computer screen a good 90% of the time and switch it around as desired, needed. (generally use nav/music if not on the trip computer)

I can confirm that mine (MY2018) VC and center screen stay on the screens that were active at the time of shutdown. What that means is that if I keep music listing on VC and GPS on center when I turn off the vehicle (for the night), it comes back like that when I go to turn it on in the morning. However, not sure if VC maintains small gauges view (will check that), and not sure if center remembers the exact screen it was shutdown on (i.e. settings, destination input, etc.) will verify later.
