I don't think there is a place to see them all...
I know in Europe, you can design your own colors, but I think we are limited to something that has been done before.
Your best bet is to just keep searching until you find something you like.
Check out my pics from the Audi Forum and you might spot something you like<ul><li><a href="http://public.fotki.com/kevin3577/misc/2007/0702160224veniceger/dsc09272.html">Pics from Audi Forum (and the rest of my trip)</a></li></ul>

go to your local dealership. ask to see the german version of the car guides. I saw the german
version of the S8 catalogue. It must of had around15 colors, and just as many options for interior.

question about these 'exclusive' dealerships....
...are they going to have a showroom where customers can evaluate samples and colors in person, as M-B does for Maybach customers? That would seem to make sense.
I hope Audi realizes there is a legitimate market for this, though I don't think it has to be as widespread as they seem to think it does. For example, I think they could get away with having just a few 'Exclusive' dealerships in the US...maybe NY, Miami, Chicago, Dallas, LA, Seattle. Anyone who is willing to spend the premium for an exclusive interior probably wouldn't mind flying to one of those dealerships to sample materials in person and place their order with someone who ISN'T a fcukup. Just my 2 cents...
