Dead cats shouldn't effect driveability other than the annoying CEL
Options:
1) Save up for new cats;
2) Get software that will disable the deleted cat (eg: STG II+ APR);
3) Mod your existing cat to disable the CEL by installing an 02 bung (http://vastperformance.com/shop/product_info.php?cPath=22&products_id=68).
Did you try to delete the CEL via vag?

I think the most cost effective solution would be piggie pipes.

its your main cats? I would just buy a used set of DPs off someone
probably just as cheap as buying new cats and having them installed in your old pipes. Or look for a set of used piggies (stock DPs with pre-cats gutted)
And yes, running without main cats has an effect on things, cats are used (among other things) by the ECU to determine proper fueling within closed loop operation (ie not start up and WOT, thats open loop) If your cats are shot, the ECU will default to maps for fueling as a safety measure, generally running a bit rich.
