My thought is you'll have to take it apart and replace the red led needle light with a white one.
and use the red background lighting
However I don't think the gauge will be easily disassembled, most other autometers the gauge is held together by the ring, which is crimped on. but these may be different.

Nice gauges, reminds me of the Defi-Link. A set of 3 would set you back around $750!!
