Oil temp gauge problem. Attn Yoda Jim De Arras! Where is the oil temp monitored? (m)

Wednesday night, drove home...went inside...odered Mexican for takeout and waited 15 minutes to drive up to restaraunt (~2 miles). About halfway to the food place (after 1 mile), I noticed an oil temp of 275!

Now, the oil should have been at normal temp (~200-225), but I don't see any way it could get to 275.

After picking up food (~3 minutes), I drive back home. Oil temp reads 200 the whole way.

Conclusion. Either gauge/sender is goofy OR oil is flowing erraticaly and sensor is positioned in an area where the flow is erratic.

One more thing of note. When this happened later, I shut engine off and back on. Gauge rises immediately to 225, then pauses about ten seconds, then rises to 275. This morning, after driving to work, it rises to 200, then pauses 10 seconds, then drops to 160.

I have a service appointment, but not till next Friday and I'm also going to the track immediately following. Don't want to melt/seize engine/turbos! Any experts care to make the long distance diagnosis?
