Is there a break-in period for new turbos? Should I wait to put the X chip back in???

No. No break in period necessary. Just make sure oil is warm and have at it.

Default really? Why do all the K04 guys go through the '500 mile' routine then?

more psychological than anything else?

Usually for the clutch actually...as most do the clutch at the same time. Turbos don't need it.
