Yeah, I was just overly paranoid about the wheels sticking out beyond the fender. I probably could have gone to a 42 offset and it wouldn't have made much difference in the end... I was being overly conservative and tried to stay with the same position as the stock wheel.

A 21x9.5" ET42 with 275/30/21 would probably be spot on.
My wheels are 21x9.5" ET40 (with 265/30/21 Michelin PSS), and I've added a 2mm spacer in front and 4mm spacer in the rear (so effectively ET38 and ET36). ECS Tuning was clearing the spacers out for $10-11 per pair, so I figured "why not?"
No rubbing, and the wheels are pretty much flush with the fenders.
