I saw someone selling Cavo rims with these tires in Canada, I thought they all come with Continentals. Did they switch for 2019, or for the coupe/cabrio?

It's both. Seems to be color and region specific. Or random for that matter.

When I picked up my '19 with the 19s, my Daytona Gray Pearl had the Hankooks. The identical spec '19 Glacier White I was cross shopping had the Continental Contact Sport 6.

Same here. 18 Daytona grey 19 wheel with Hankook tire. Is it really color related?

It varies. Much less common but my 18 Daytona S5 SB came with 19 Bridgestone Potenzas.

Excuse the typo above. I don't seem to be able to edit as I'm a noob. I was told that in each plant, they make more vehicles that require the same spec tire than the tire manufacturers can supply at any given time, so Audi buy in different makes to to make sure they can drive them off the production line.

I also have a 2019 delivered with Bridgestone Potenzas. Unfortunately, it seems that the one performance tire Audi won't put on this car is the Michelin PS4.
