Default A little late, but here's last night's BBQ marinade.......

For anyone looking for a "sneaky spicy" beef marinade, here's what I threw together last night:

One bottle of Sam Adams
1 Medium Vidalia onion (minced)
2 cloves chopped garlic
3 TB worcestire sauce
1/2 ts cracked black pepper
1/2 ts paprika
2 TB Dijon mustard
2 TB Vietnamese chile sauce (thick)
2 TB balsamic vinegar

Marinate 2 lbs of beef (cubed) for AT LEAST 9 HOURS.

Soak hickory & mesquite chips in 1/2 cranberry juice, 1/2 water with a healthy pinch of dried rosemary for 20 - 30 minutes then throw the chips on the coals before grilling.

I basted the skewers with a mix of southwest BBQ sauce, more vietnamese chile sauce (not the thick variety) and leftover marinade.

If you don't enjoy spicy food, you'll hate it. The exceptionally long marinating time allows the heat of the chile sauce to permeate the meate completely so every piece id truly HOT (but very flavorfull).

just make sure it is a full bodied beer and ABSOLUTELY NO LITE BEER !!

Do yourself a favor and have the rest of the six pack handy to put out your toungue!
