OT: If anyone's looking for a high quality, inexpensive egg/omelet pan...

IMO, 10 " is very large for a 2 egg omelet.
I have used a Calphalon Commercial 1307, 7 in. pan for years for 2 egg omelets because I prefer the thicker and therefore fluffier omelet you get in the smaller pan. I've not tried their new P1307 pan, but it looks good.
This 10 in. pan is a great deal, however, especially for scrambled. If you don't have one, go for it.
BTW: Anyone else really like cooking omelets? How about sharing some techniques.

I am thinking of switching to Calphalon. I have been using Circulon for 5 years but they pans are
starting to wear and the Teflon is coming off (because of unauthorized use of metal utensils I am sure!
