Oil temp sender is *independant* of the instrument clsuter, and is aa separate sender on the oil pan.
one wire from this sender comes from the sender, right to the gauge.
Why did, supposedly, my oil temps go high, and mimic the exact temp changes of the water temp gauge?

the thermostat works independently of the sender correct.
so the car should not have been running hotter right? Your sender was just sending bad info to the cluster.
Or does the sender open and close the thermostat to control cooling? If that is the case then your car could have been running hot.
Or, does none of this makes sense and do I sound like Everso?

My oil light was going off and my temps were bouncing all over the place
this was fixed by replacing the O2 sensor. Symptoms did not make any sense in my case either. I suspect Steve is right about the main cause though :-)

All points to a sticking thermostat ...->
Engine overheats , oil heats up so oil oil temp indicator goes up so a bad sender does not make sense. Unless the thermostat is controlled by the sender, I would change the thermostat too. Aluminum heads don't like to overheated.
