There is a point where bigger/wider tires are actually a detriment to handling, most notably in a loss of "tossibility." I've been down this road before. Recommend sticking with the OEM size and again going with a tire built to [somewhat] protect the rim lip.

I guess the wider tread could give a higher rolling resistance.

Do you mean that you expect a better or worse ride with the wider tyre?

Thanks for your thoughts. My thinking is that my old TT (Mk ii TDi S-Line Special Quattro 2010) had 255/35-19 tyres as standard. And it was VERY tossable. Its handling was noticeably better than the new one, incredibly stable on the twisty country roads I like driving. The new one is much more twitchy. The tyres were not, of course, the only reason for that, but may have contributed.

I was expecting better since MPSS are a bit softer and the Bridgestones S001

The ones I got with the car are Hankook Ventus S1. They grip well but fuel consumption is higher than expected and they are extremely noisy. When I change them it will be different! Possibly Dunlop, which worked well on the old car.
