I hope this isn't a silly question but is it possible/ how difficult is it to change the wheel hub to change from a 5 nut rim to, say, a center nut rim?

Would it be impossible to do because of the wheel speed sensor?

This kind of conversion is possible and is even an OEM option on some cars, although they tend to be very high end. For example, The Porsche GTS has a center nut/five-lug option that is identical in price. Curiously, Porsche recommends the five-lug set-up for track use and frequent wheel change situations as the center lug is much more complicated than it looks. It is secured with over 400 ft-lb of torque which will destabilize a car when it is on a jack and you try to tighten even half of the torque. The five lugs at 80 ft-lb/each can be easily removed with an impact wrench or ratchet and replaced with a hand-operated torque wrench.

That being said, Forgeline, among others offers a conversion package:

I am wondering if this is primarily an aesthetic decision, or some performance consideration? Theoretically a center locking wheel might weigh slightly less, thus reducing unsprung weight, but that is not where I would start in that attempt.

Purely aesthetic though. Given what you said I don't think I would go through with it. It would make changing a tire on the side of the road impossible.
