Can you use the vag to re-calibrate the speedo for different size wheels?

true, but they could have %limitaions on it. You could just as easily get oversized tires right now
which would make you drive further than your odometer actually shows. If it was adjustable within the settings of what possible tires could reasonably fit on the car, it'd be cool. Of course, then I guess that opens up the window to hacking those %. As I recall, right now there is a one-time resetting of the odometer, but not something you can do through the VAG alone. It does not appear that anyone has hacked that, so I don't see why they couldn't do the above while feeling no differently about security risks. Probably just amounts to the fact that there's no major need for the function. You just put the damn right size tires on that Audi tells you and that's the end of the story!
